I'm no contractor, but I did just redo my kitchen. I think my two takeaways are
* Take your time: I think the problem people have when they do something like remodel a kitchen is they get overwhelmed so they counterreact by picking the first simple option
* Don't pay for what you don't need. One of the biggest determinants of cost, especially for cabinets, is how specific what you need is, in terms of size, finish, and more. If you want white shakers you should probably avoid paying more for a highly customizable brand. If you like granite don't go spending on quartzite. If you don't cook much don't buy a high end Miele cooktop.
For instance, just looking at cabinets, you have RTA, Custom, full Semi Custom, streamlined import brands that are slightly customizable, and builder grade cabinets among others. As a non-professional who did research off the top of my head I can name 5 RTA shops, 10 semi-custom shops, 7 import brands and 5 off the shelf/builder grade brands. That's 30 companies right there, but it really gets up to hundreds.
Take some time, do some research, get help on Houzz or Reddit (with the caveat that most people are not experts, so take randos opinions with a grain of salt), maybe pony up the 1.5-2k for an actual designer **who does not sell cabinets** (otherwise you'll buy Fabuwood at a 40% markup).
Narrow down - don't go digging into every cabinet brand out there, you'll go nuts. Pick \~10 brands that are pretty common and narrow them down from there. Use your budget as a guide. Same with counters - narrow it down to ballpark what color and style/material you want and then winnow down the options.
Fun fact: As I've said many times before, if you're on a budget you can get plugin under cabinet lighting for like 150$ and extremely minimal effort
