I will agree with you here. In a past life I was in the restaurant industry and I still love to cook. My advice is mostly pertaining to the “average” (for lack of a better term), homeowner that picks their finishes based off architectural digest or another magazine as opposed to based off function based design. Second your choice for an industrial strength hood. I’ve never come across a residential hood that does the job it’s supposed to. Hope you enjoy what sounds like a beautiful kitchen.
