Seems like a fine itinerary! Funko isn't far from the Dolby - you can stop and get tacos in between or right before the show. You can see the Hollywood sign from the Hollywood/Highland complex itself - there's a convenient little viewing bridge there and everything. Also, I always recommend driving up the PCH - I love that drive. It's pretty with tons of places to stop and see the water, hike in some hills and even run up an idiotically huge sand mound. Have a bite at Neptune's Net, maybe. Or Duke's, or grab something from the Vintage Market and eat it on the beach across the road.
